We celebrated Josh’s birthday last night with dinner at home! I invited my family over to celebrate with us.

This girl was quite the little character last night. She thinks she’s the life of the party!
Josh requested homemade pizza and salad, so I made a BBQ Chicken and Pineapple pizza, as well as a Three-Cheese Garden pizza. (I included the recipes at the end of the post)
Brody picked out the colors for the cake! I loved the navy and orange! We ordered Josh’s cake from another local cake place because he doesn’t love the tastes of the cakes from our normal cake place. Gasp! :)

BBQ Chicken and Grilled Pineapple Pizza (Original recipe from Sing for Your Supper)
1 large, thin pizza crust (I used Boboli brand)
1 cup grated mozzarella cheese
1/2 cup grated cheddar cheese
2 chicken breasts, fully cooked and shredded (I baked mine in the oven coated in BBQ sauce for a little extra flavor)
1/2 cup BBQ sauce, plus more for brushing on the crust
1/4 cup ranch salad dressing
fresh pineapple, cut into 1-inch pieces (however much you like- we like lots!)
fresh cilantro, chopped, about 1/3 cup
Preheat the oven to 375 degrees. Toss the cooked, shredded chicken breasts with the BBQ sauce. Set aside. Brush the pizza crust with a thin layer of BBQ sauce (if you’re using homemade pizza dough or the roll-out kind in the can, you’ll need to pre-bake it for 10 minutes or so, just to crisp it up a little bit. My crust was pre-baked already, so I skipped this step), then spread on the ranch dressing. Top with the cheddar cheese and mozzarella cheese, then the chicken and pineapple. Bake for about 15 minutes, until all the cheese is melted and the crust is golden brown. Top with the chopped cilantro. Makes 1 pizza.
Pampered Chef Three-Cheese Garden Pizza (Original recipe from Pampered Chef)
1 (10 ounce) package refrigerated pizza crusts
2 garlic cloves , pressed
2 tablespoons olive oil
4 ounces mozzarella cheese , shredded
4 ounces cheddar cheese , shredded
1 medium tomato , sliced
1 teaspoon Italian seasoning , dried
1 medium zucchini , sliced
1 small onion , sliced (I only use half of a small onion)
1 cup fresh mushrooms , sliced
¼ cup parmesan cheese , shredded
Preheat oven to 400 degrees F. Place pizza dough on flat stone of your choice. Roll dough to fit stone. Combine garlic and olive oil and brush onto crust. Bake 7 minutes or until lightly browned. Remove from oven. Sprinkle with mozzarella and cheddar cheeses. Top with tomato and Italian seasoning. Layer zucchini, onion and mushrooms over tomato. Sprinkle with parmesan. Bake 15 - 18 minutes more.
