Lemon Drop Cupcakes

Yesterday, my best friend, Julee and her husband, Matt, found out they are having a baby girl! We could not be more excited for them! (And more shocked!) It’s amazing that after two years of praying for them to have a baby, we will have girls only a year apart in age! I’m so excited to think about all the fun we will have together with our girls and the friendship Jillian and Preslee will have!! We are just so thankful for Preslee and praising God for her! We cannot wait to meet her!

Brody and I took a few little baby girl things to Julee last night. We had some wonderful friends and family members who gave us gifts for Jillian the day after her gender ultrasound and I remember how much fun and how special it was to already have baby girl things in our house! Especially since it’s always so surreal the day after the gender ultrasound. It’s fun to have a little reminder that you really are having a baby!


Julee’s brother, Evan, is living with her and Matt right now. He just took a job in our area and his wife, Rachel and their son, Seth, are still waiting for their house to sell back at home. We all went to college together, and Rachel and I were pledge sisters, so it’s fun that they will be up here, too! Brody LOVED playing with Evan last night! They played outside for a while and then Evan showed him how to play a guitar, or as Brody calls it, a goo-tar!



After we got home last night, I made lemon drop cupcakes for my friend, Marci. Marci is due with her 4th baby, a boy, anytime now and she is very ready to have him! She and her husband have a 4 year old, 2 year old, and 1 year old, so she is a very busy momma! She called every local bakery yesterday looking for these cupcakes. Supposedly, these cupcakes can induce labor?? There is lots of things on pregnancy message boards about them. We have a friend that it worked with, and Marci is desperate for something to work.

(The kitchen labels were sent to me as a Christmas gift  from a sweet blog reader, but she ordered them from I love them and use them all the time when I cook for friends!)

Funny story, Marci’s husband had to go out of town last week and Marci was having regular contractions. If she had gone into labor while her husband was out of town, I was going to be with her when she delivered the baby. I sent her daily texts and some included hour countdowns of how much longer she had to to wait before he would be home and she could go into labor. Obviously, she didn’t have him last week and now that she is ready to have him, the contractions have completely stopped! Go figure! So we are hoping these do the trick. They were fun to make and even if nothing happens, Marci can happily eat several cupcakes! :)


Just in case you are curious what the recipe is, I posted it below. I have no idea how or why people think these work. It seems impossible that these could do a thing. Josh ate one and said he thinks they make you go into labor because they are so tart! Ha! Who knows??? They are something silly and fun to try anyway, and honestly, sometimes you just get to a point that you willingly try just about anything to get your precious baby here!

Lemon Drop Cupcakes

1 cup butter or margarine, softened
2 cups sugar
3 eggs
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sour cream

3 tablespoons butter or margarine, softened
2 1/4 cups confectioners' sugar
2 tablespoons lemon juice
3/4 teaspoon vanilla extract
1/4 teaspoon grated lemon peel
1 tablespoon milk

1. In a mixing bowl, cream butter and sugar. Beat in eggs, one at a time. Add lemon peel and vanilla; mix well.

2. Combine dry ingredients; add to creamed mixture alternately with sour cream (batter will be thick).
3. Fill greased or paper-lined muffin cups with 1/4 cup of batter.

4. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean.

5. Cool for 10 minutes; remove to wire racks to cool completely.

6. For frosting, cream butter and sugar in a small mixing bowl. Add lemon juice, vanilla, lemon peel and milk; beat until smooth. Frost cupcakes.

I've never heard of lemon drop cupcakes inducing labor before! Hmmm, wish I had known about those three months ago!

I read an article, on Yahoo I believe, that talked about these cupcakes inducing labor. They offered some kind of possible scientific reason, but I don't remember. Maybe they just make you relax? I mean, cupcakes are awfully relaxing, and I would think that once you stop stressing out about going in labor it would happen, right? *lol*
